WThis is an easy interpretation of a drink from a new drinks list. This is a party-sized prepared mix that is loaded with the flavours of a holiday season, making it ideal for hosting a holiday party. Any leftover syrup to use in morning drinks, puddings, or for additional servings of the drink.
The Bikini Cocktail
Yields 10 guests
For the Clementine Cordial (yields 750ml)
300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g caster sugar
To make the Cocktail (makes 850ml, enough for 10)
400ml good quality vodka
100ml dry gin
150ml peach liqueur
200ml clementine syrup (from the recipe above)
Whole cranberries, to garnish
Mandarin essential oil, for finishing
Method
For the Syrup: Put the listed components inside a pan, heat until it reaches a light boil, stirring to dissolve. After that, take off the heat and let it to cool down entirely. Decant to a sealable bottle, cap it and store chilled, it can be stored for around four weeks.
For the Batch Mix: Combine all the liquid ingredients into one big jug, allow it to infuse for 60 minutes, then pass it through best through a fine cloth, to ensure it's fully clarified.
When ready to serve: Pour 85ml of your batch mix into your mixing glass filled with ice, and stir carefully for about 60 seconds to chill. Strain into an cold coupe glass or equivalent, decorate with a few cranberries and complete it using a light spray with the mandarin essence over the drink.
